Cinnamon Vanilla Waffles

I make this recipe every weekend for the boys. If you are going to feed more than 4 people, I suggest doubling this recipe. Or if you are going to feed 2 super fat hungry people, again, go ahead, double it.
ingredients:
1 cup all-purpose flour
1/4 teaspoon salt
1 Tablespoon sugar
1-1/2 teaspoons baking powder
1 cup milk
1 egg
1-1/2 Tablespoons butter, melted (plus more to grease the waffle maker)
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
Prep your waffle maker by pre-heating and buttering the grill. A Hello Kitty waffle maker makes it taste way better, trust me.
This is a simple one bowl recipe. Dump all the ingredients in a bowl, mix it up til the lumps are gone, and you’re good to go.
Now are these the cutest waffles you ever did see? And super tasty and cinnamon-y!

Broken Glass Jello

This is one purty purty dessert. Great for parties.
ingredients:
4 small boxes of jello, different colors
1 (14oz) can sweetened condensed milk (Like Eagle or something, got it?)
2 envelopes unflavored gelatin
water
Dissolve each box of jello separately, into one cup of hot water. Pour into individual containers (small tupperware works well) and chill overnight.
Ready a 9×13 pan.
Cut flavors of jello into small blocks.
Mix together carefully in pan.
In a separate bowl, dissolve 2 envelopes unflavored gelatin in 1/4 cup cold water. Add dissolved gelatin to 1 3/4 cup hot water and condensed milk. Cool.
Pour cooled milk mixture over jello and chill overnight.
This makes for great party food. The colors are so pretty your guests will be impressed, like you took hours to make it!

brown sugar
you’ll also need:
a crock pot
toothpicks
Start by cutting strips of bacon into thirds or halves. (Thirds if you are cheap like me.) Then wrap one strip around the smokie and insert a toothpick to hold it in place.
Throw them all in a crock pot and crumble a whole bunch o’ brown sugar on top. Turn on the pot to high for about 2-3 hours, and you’re done! I’d post a picture of the finished product, but they were eaten so fast, I didn’t get a chance!

Blueberry Mochi

It’s amazing the things you can do with mochiko. Mochiko Chicken, An mochi, this here is a take on custard mochi, but with an added kick - blueberries! It’s crunchy, chewy and oh so delicious. Taken from the book Hawaii’s Best Mochi Recipes by Jean Watanabe Hee.
ingredients:
1 pound mochiko (1 box)
1 cup butter, melted
2 cups sugar
1 can evaporated milk
4 eggs
2 teaspoons baking powder
2 teaspoons vanilla
12 oz frozen blueberries (or 1 can blueberry pie filling)
The original recipe says to use blueberry pie filling, but for some reason that grosses me out, so I just got a bag of frozen blueberries (about 12 oz) . I think it gives a better consistency…
Stir sugar in the melted butter. Add milk and mix well. Add eggs and mix. Stir in baking powder, mochiko and vanilla. If you don’t know what mochiko is - you definitely need it in your pantry. It’s a white rice flour and it’s very fine.
If you know my other recipes you know that I never flour the pan, I only brush it with melted butter. But hey, do what you want.
After the batter is mixed, I folded in my thawed blueberries. THEN poured it into my greased pan.
The book, however, tells you to put the batter in the pan, then pour blueberry pie filling (YUCK), on top and swirl it in. I think my method’s better, but you decide. The blueberries will tint the batter a little, don’t mix too much or it will look gray. Bake at 350 degrees for 1 hour or until the toothpick tests clean.
Isn’t it a lovely golden brown! Delish!

Honey Spice Cake w/Coffee Glaze
I LOVE the taste of coffee. This cake is ok, but with the glaze…FANTASTIC.

ingredients:
1 cup hot water
1 tsp instant coffee or instant espresso
1 cup honey
3/4 cup sugar
1/2 cup vegetable oil
4 eggs
3 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cloves
1/2 tsp allspice
Heat oven to 325 degrees and prep your bundt pan the way I like, with melted butter and a sili-brush.

Mix the hot water and the instant coffee and set aside. In a mixing bowl, mix honey, sugar, oil and eggs. Mix the dry ingredients in a separate bowl. Then partially add the dry ingredients and the coffee mixture, alternating until well incorporated.
Spoon batter into your prepared bundt pan and bake for 60 minutes, testing with a toothpick for doneness.
While the cake is cooking, start your coffee glaze. Add 2 teaspoons of instant coffee to 3 Tablespoons of warm milk. Mix well. Then mix together 1/2 tablespoon of butter and one cup of powdered sugar. Add the coffee mixture until you get the right consistency for glaze.
Pour the glaze on the cake, drizzling over the top. While the drizzling job I did on this thing may look slightly macabre, I am telling you it is DEEELISH.
slow chops (crock pot pork chops)
This recipe is fast and easy. Just throw the junk in, turn it on, and eat. Great if you work. Or have kids. Or have no time. I have all three going for me…

ingredients:
8 boneless pork chops
salt and pepper
one small onion (sliced)
1/4 cup brown sugar
1 tsp ground ginger
3 Tablespoons honey
1/2 cup soy sauce
1/4 cup ketchup
2 cloves garlic, crushed
Place pork chops in the slow cooker. Sprinkle with salt and pepper. Toss sliced onions on top. (If you want to use them, that is)
Mix all the ingredients and pour on top. Cook on low for 4 to 5 hours. Uh…that’s it!
I don’t like to serve things out of the slow cooker, or any pot/pan for that matter, it doesn’t look nice. I am definitely a serving plate kinda gal.
So if you transfer these to a serving dish, make sure you pour some of the liquid over the chops. Because pork is…well, pork, it dries out fast, and these are tender and soft right out of the cooker. However, let ‘em set for a while and you’ve got dry city up in here. Sauce is tasty, work with it!
