DOMO KUN Peppermint Chocolate Chip Cupcakes

You know I LOVE the combo of peppermint and chocolate. So a peppermint chocolate cupcake sounded like the right way to go and I added some chocolate chips, you know, for good measure. The secret ingredient in this? CHOCOLATE MILK. Mmm. Makes a difference. A good ‘ol chocolatey difference.

Since the Kid and I have been sketching DOMO lately:

I thought that the brown chocolate frosting would make a great character cupcake. Just a little fondant and there you go – a tasty DOMO KUN!

ingredients:
2 sticks of butter, softened
2 cups sugar
4 eggs
1 Tablespoon peppermint extract (the good stuff. Don’t cheap out, you bastard)
2-1/2 cups flour
1/2 cup Valrhona cocoa powder (again, don’t cheap out)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate milk
1/2 cup mini chocolate chips

Preheat your oven to 350 degrees. Prep a cupcake pan with liners.

In your mixer bowl cream the sugar and the butter until fluffy. Add the eggs one by one and finally add the peppermint extract.

In a separate bowl combine the flour, cocoa, baking soda and salt. Set aside.

Now pour yourself a cup of chocolate milk. If you don’t have chocolate milk you can make it with a mix or what have you, it’s all good.

To the butter mixture still in the mixture, on a low speed alternate the flour mixture and the chocolate milk, until well combined. Stir in the mini chips, and spoon into your prepared pan.

Bake for 20+ minutes depending on your oven, checking with a toothpick. Let cool on a wire rack.

Once cooled, frost the cupcakes. I used my peppermint frosting, but a plain chocolate will do, as long as it’s brown of course. Now for the DOMO mouths I just dyed some fondant red, cut squares, then cut white ‘teeth’.

Simple. Quick. Add some black frosting eyes and there you go – delicious, cakey – DOMOs!!!

Peppermint frosting

This works great with any cupcake, especially chocolate-y ones. Also good on brownies….yum…

ingredients:
6 Tablespoons butter
3 cups powdered sugar
3/4 cup cocoa powder
1/3 cup milk
2 teaspoons peppermint extract

Cream the butter and the sugar, CAREFULLY. Nothing like white flecks everywhere to ruin your black shirt. Just sayin’.

Add in the cocoa powder, alternating with the milk. Sometimes I need a little more milk, you decide. Finally add the peppermint extract, turn speed to high until the frosting is nice and fluffy!
