Mini Caramel Apples

caramel apples
I LOVE caramel apples. The crunch and sweetness is one of my favorites, esp in the fall. Since I love all things tiny, I really wanted ‘lady apples’ the super tiny ones, but any apples will do.
These are fun to make for a Halloween party or just for a festive family snack!

Ingredients:
apples (20 mini ones or 10 regular sized ones)
sticks
2 bags of caramels
toppings

Make sure the apples are room temperature and wash and dry them WELL. Ready a sheet of wax paper by buttering it, this will prevent stickage later when you’re done with the caramel.

Put the sticks into the tops of the apples. I used lollipop sticks because these apples were small but popsicle sticks are great too. Just push them down about 3/4 of the way into the core.

In a pan on low to medium heat, melt the caramels. Stir and make sure it doesn’t burn. A microwave will work as well.

Ready a mise en place of your toppings so that you can quickly move from the caramel. I used sprinkles but nuts, chocolate chips, marshmallows, anything you can think of can be rolled onto the apples.

Once the caramel has melted and is smooth, simply take the apple and dip it into the caramel in one smooth motion, letting the excess drip off. I suggest lightly scraping the excess off the bottom of the apple, as the caramel will slide and pool.

Working fast, quickly move to the toppings and roll the apple until it is covered. Set the apples down on the buttered wax paper and let them rest. Put them in the fridge til you are ready to serve. These small ones make really cute treats for the toddler set.

Hm…burned…that shouldn’t happen. Make sure you stir, and watch, stir and watch. That’s the key.
If you are still having trouble, just get the caramel to a melty consistency…then take it off the heat. Yikes – good luck!

i always use a double boiler to melt caramels and chocolates, etc. it works cause they are not by the heat, they heat by the boiling water underneath
