Banana Crumb Muffins

Overripe bananas getting you down? Seeing them on my counter depresses me so if they didn’t make it into smoothies, muffins was the next best option.

After I made these they were were so popular with the kids that I had to admit, they are now one of *my* favorite muffins! But don’t tell anyone or I’ll be ousted as head of the ‘I hate bananas’ club!

Banana Crumb Muffins

Ingredients:

muffin ingredients:
1-1/2 cups all-purpose flour
3/4 sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
3 large ripe bananas, mashed
1 egg
1/3 cup butter, melted
1 teaspoon vanilla

crumb topping
1/4 cup white sugar
3 Tablespoons flour
1 teaspoon cinnamon
1/8 cup butter, cubed

Instructions:

Preheat oven to 350 degrees. Prep a muffin pan with liners.

In a bowl whisk together the flour, sugar, baking powder, cinnamon, nutmeg, baking soda, and salt.

Make a well and add the mashed bananas, egg, and melted butter. Mix until smooth.

Pour batter into the prepped liners.

In a small bowl, cut the butter into the sugar, flour and cinnamon to make the crumb topping.

Sprinkle liberally over the tops of the muffins.

Bake for 20-25 minutes depending on your oven until a toothpick comes out clean. Let cool on a wire rack.

    I didn’t really care for these muffins. I don’t know if it was the bananas I used or what but they left a weird aftertaste.

    deanna-i would say to give it another go.these muffins were amazing! and im not to fond of bananas or cinnamon.my famliy devoured them in 2 days.yummmers!

    WHOA!!!!!! These are excellent. Seriously, you have to make these (AND eat them)…easier than the cupcakes, and more breakfast-y. But there must be other people besides me who sometimes eat cake for breakfast…by the way, the blueberry mochi tastes great straight from the fridge, and for breakfast.
