Baked Breakfast Scotch Eggs

When you bake as much as I do, there always seems to be an overabundance of eggs. So I often make and keep boiled eggs in the fridge because they’re an easy protein-filled snack to grab and go.

I decided to use up these boiled eggs by making Scotch Eggs. Scotch Eggs are usually fried but I made these in the oven which turned out just as nice and crispy, thanks to the fact I used crushed Corn Flakes for the breading. The cereal gives it a crunchy texture without the frying, plus it adds a breakfast element to this hearty meal.

These are great to make ahead, then bake off when you’re ready to eat. Plus a few Star Wars Stormtrooper food picks make serving them up a lot more fun for the kids!

Baked Breakfast Scotch Eggs

Ingredients:

6 boiled eggs, peeled
1 lb breakfast pork sausage
1 clove garlic, minced
1/2 teaspoon onion powder
salt and pepper
1 egg, beaten
2 cups Cornflakes, crushed

Instructions:

Preheat the oven to 400 degrees. Prep a cupcake pan with non-stick spray.

In a large bowl stir together the pork sausage, garlic, onion powder, salt, and pepper.


Shape the meat mixture into 6 equal balls. Take one ball and flatten it out, placing a hard boiled egg in the center, wrapping the meat mixture around the egg.


Dip into the beaten egg, then roll into the crushed cornflakes.

Place into the prepped pan and bake for 35-40 minutes until the sausage is cooked through.
