Barry Manilow – Mandy Candy cupcakes

If it were my birthday, I’d want cupcakes with Depeche Mode on them. The Dave one would spin, the Martin one would be decorated in chainmail, the Alan one would be musical and the Andy one would…stand around. Hm.

Point is, who wouldn’t want their favorite band/singer on a cupcake?!?

So that’s what I did for my friend who LOVES…Barry Manilow. Yep, she is a Fanilow and I thought the best way to celebrate would be with a ‘Mandy‘ candy cupcake.

ingredients:
1 cup (2 sticks) butter
2 cups sugar
2 eggs
1 teaspoon vanilla
1 cup whole milk
3/4 cup cocoa powder
2 cups flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
chocolate – disks

and
chocolate frosting
red heart lollipops

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In a medium bowl whisk together the flour, cocoa powder, baking powder, baking soda and salt.

In the bowl of an electric mixer cream the butter and sugar until fluffy.

Add the eggs, one at a time. Then the vanilla.

Alternate the flour mixture and the milk until combined.

Pour the batter into the prepped liners. Now here comes the candy. I wanted something chocolate-y that would melt into the cupcakes, not just keep their form like chocolate chips would. So I got these chocolate coins from Trader Joes for just 49 cents. Quite a steal. I plunged one of these into the batter and buried it right before baking. Of course I have no pictures of it – sometimes I get so caught up in the details I forget. Sorry!

Bake the cupcakes for 15-17 minutes depending on your oven. Let cool on a wire rack. When the cupcakes are cooled, frost with chocolate frosting.

I printed out the classic Manilow pose from his ‘Barry Manilow Live‘ album – but I added in a nice ‘happy birthday’ greeting stretched out over the top, as if he was singing it from the top of his lungs.

Then I put the images on skewers and pushed them into the cupcakes as well as some red candy heart lollipops because of all the Barry love, of course.

I think she was happy with the cupcakes, after all it’s not like Barry Manilow cupcakes are available in every corner bakery. Although maybe they should be… ‘Looks like we ATE it‘ would be a great bakery name…
