Another CSA recipe! Beautiful full heads of broccoli have found their way into my CSA box. It’s the Kid’s fave vegetable and he loves to eat the “little trees.” While broccoli makes a great side dish, sometimes it’s nice to make it a star.
A big pot of hearty soup, creamy and cheesy, makes for a comforting warm winter meal!
1/4 cup (1/2 stick) unsalted butter
2 Tablespoons all-purpose flour
2 cans (14 oz) chicken broth
1 cup heavy cream
1 head broccoli (washed and cut into florets)
2 cups cheddar cheese, grated
dash of nutmeg
dash of cayenne
salt and pepper
2-3 pieces of bacon, cooked
In a large pot over medium high heat, melt butter and add the flour to make a roux. Cook down for a few minutes.
Add the chicken broth, heavy cream and the broccoli. Season with nutmeg, cayenne, salt and pepper. Reduce heat to medium, cover and simmer for 20-30 minutes.
Uncover and add the cheese. Using a potato masher, mash up the broccoli and stir.
Serve immediately. Garnish with crumbled bacon.
