Another CSA recipe! Beautiful full heads of broccoli often come in my CSA box and while broccoli makes a great side dish, sometimes it’s nice to make it a star. Add cheese and cook it down into a hearty soup, then maybe a side of crusty bread and a salad and you have a great warm winter meal!
ingredients:
1/4 cup (1/2 stick) Butter
2 Tablespoons Flour
2 cans chicken broth
1 cup heavy cream
1 head broccoli (cut into florets)
2 cups cheddar cheese, grated
salt
pepper
dash of nutmeg
dash of cayenne
2-3 pieces of bacon, cooked and crumbled for garnish
In a large pot over medium high heat, melt the butter and add the flour to make a roux. Cook down for a few minutes.
Add the chicken broth, heavy cream and the broccoli. Season with salt, pepper and nutmeg. Reduce heat to medium, cover and simmer for 20-30 minutes.
Uncover and add the cheese. Using a potato masher, mash up the broccoli.
Stir until combined, then serve immediately. Garnish with crumbled bacon.
