Broken Glass Jell-o Pie

Broken Glass Jello may a popular Hawaiian party food, but I remember seeing a very old recipe where it was also made into a refrigerator pie. Using red, white and blue I decided that this would be the ideal Patriotic dish for the Fourth!

Creamy with a hint of fruity pineapple this Broken Glass Jell-o Pie has a crust made out of Nilla Wafer cookies for extra crunch.

A different take on Broken Glass Jell-o, cool and refreshing, the perfect pie for a summer holiday!

Broken Glass Jell-o Pie

Ingredients:

crust ingredients:
2 cups Nilla Wafer crumbs
1/3 cup melted butter

pie ingredients:
1 (6oz) package Strawberry Jell-O
2 cups boiling water
1 (6 oz.) package Blue-Raspberry Jell-O
2 cups boiling water
1-1/2 envelopes unflavored gelatin
1 cup pineapple juice
3 Tablespoons cold water
2 cups heavy whipping cream
1/2 cup powdered sugar
1/2 teaspoon vanilla

Instructions:

Mix together the Nilla Wafer crumbs and melted butter, then press into bottom of a 9-inch spring-form pan.

In a bowl stir together the Strawberry Jell-o with 2 cups boiling water. In a separate bowl do the same for the Blue-Raspberry Jell-o, mixing it with two cups of boiling water. Pour each flavor into a separate square pans. Chill overnight.

In a saucepan over medium high, heat the pineapple juice and sprinkle the gelatin on top. When the gelatin has melted remove from heat then add the cold water. Chill until slightly thickened.

In the bowl of an electric mixer whip the heavy cream, powdered sugar and vanilla until stiff peaks form. Fold in the chilled pineapple gelatin mixture until combined.

Cut up the red and blue Jell-o into squares and carefully fold into the pineapple cream mixture.

Pour over prepped crust and chill in the refrigerator overnight.

Release the spring form pan, and serve.

  1. Love it! I’ve never seen it as a refridgerator pie. My mom would love it too- she loves making broken glass jello.

    How much cold water is added to the pineapple juice/gelatin mixture? It’s not on the ingredient list. Thank you.

    Sorry about that – 3 Tablespoons. Just enough to get the temp down then you put it in the fridge to chill a bit.

    How many minute do you have to chill?? The pineapple mixture could be a little warm? Because if i chill too mucho the mixture gets really thick
