ingredients:
2 cups flour
2-1/2 teaspoons baking powder
pinch of kosher salt
1-1/2 sticks butter, diced
1/2 cup buttermilk
1 egg
2 cups cheddar cheese, grated
sliced almonds
Preheat oven to 425 degrees. Prep baking sheets with silpats.
Place flour, baking powder and salt in the bowl of an electric mixer. Turn it on low, and carefully add the diced butter until the mixture is crumbly, like small peas.
Add the buttermilk and egg to the flour mixture until just combined. Add the cheese, careful – don’t over mix!! Just until combined, then STOP.
Dump the dough out onto a floured surface and knead slightly. Form small 3″ – 4″ logs and place on the prepped silpats and flatten them slightly.
Press a sliced almond into the end. You’ll be surprised at how ‘finger-like’ they suddenly look.
For added texture I use a paring knife and press lines into the ‘finger’ to make it look like knuckles. This adds a lot.
Bake for 15-20 minutes until golden brown. Serve with a side of blood, I mean marinara sauce.
