Cherry Pie Filling

I had tons of cherries from the Farmer’s Market, I though pie was in order. Pie on a stick to be exact. But here’s my pie filling recipe – which does not always have to involve sticks…

ingredients:

2 cups cherries
1/2 cup sugar
2 TB lemon juice
2 TB cornstarch
1/2 teaspoon almond extract

In a large saucepan combine the cherries, sugar and lemon juice. Over medium high heat, cook til soft, mashing the cherries, throughout.

Once it starts to get saucy, spoon out some of the liquid and mix it into a paste with the cornstarch. Add it back into the pan mixture and stir until thickened.

Stir in the almond extract. Now your pie filling is ready…for something wonderful…
