chocolate sour cream frosting
Actually, I hate sour cream. And cream cheese. But when you use it as a cooking ingredient, I don’t mind it. I have to say, that’s the best thing about this recipe that you CAN’T taste the sour cream. Sorry, I’m weird. I have to say, this is definitely my go to frosting when using chocolate. REAL CHOCOLATE. Since the Kid can only have cocoa, it’s rare that this is made - but if I am baking gifts - this is really the way to go. Perfect, just sweet enough, and so easy.
ingredients:
1 cup chocolate chips
1/2 a stick of butter
1/2 cup sour cream
1 teaspoon vanilla extract
1/4 teaspoon salt
2-1/2 cups confectioners’ sugar
Melt chocolate and butter in a saucepan, stirring well. Let cool, then stir in the sour cream, vanilla and salt.
Put this in a mixing bowl, and beat - adding the confectioners’ sugar, slowly. Beat on high for 1 minute until the frosting is fluffy and ready to use.

How do you store this frosting? Does it need to be refrigerated since there is sour cream in it? Thanks!

It doesn’t, since the sour cream is kind of cooked, but I do like to refridgerate frosting when possible, especially if it’s been hot the way it has been - then I don’t like to leave ANYTHING out.

So easy, and very tasty. But probably not a great recipe for a hot day… it started to melt between the time I finished beating it and the time I frosted 17 cupcakes! Still, definitely a great new addition to the frosting repertoire.
