Coffee Chip Ice Cream

My addiction is coffee and I’m totally proud of it. I love to eat, drink, basically consume it in all forms as often as possible. And while black coffee is my vice of choice, when it comes to ice cream I can’t deny a little cream makes all the difference.

I came up with this coffee ice cream out of necessity to quell my fix and with the addition of chocolate chips it makes it even better. Once you see how easy this recipe is to make you’ll find yourself making it for dinner parties, birthdays, snack time on a Wednesday afternoon… I know. I need help.

Coffee Chip Ice Cream

Ingredients:

2 cups heavy cream
1 cup whole milk
2-1/2 heaping Tablespoons instant coffee crystals
3/4 cup sugar
1-1/2 teaspoons vanilla extract
1 cup mini chocolate chips

Instructions:

Prep an ice cream maker freezer bowl ahead of time.

In a bowl, stir together the heavy cream, milk and instant coffee.

Whisk in the sugar until dissolved, then stir in the vanilla.

Cover and refrigerate for 15-20 minutes.

Pour the cold mixture into the prepped freezer bowl and freeze in an ice cream maker according to manufacturer’s directions.

In the last five minutes add in the mini chocolate chips.

When done, transfer to an airtight container and freeze until ready to serve.

    @Susan
    You can use milk, but you will get more of an ice milk – still a good flavor, just not as creamy.
