Cookies. Cupcakes. It’s the eternal question of the ages. Why argue when you can have both in one bite?
These cookie cupcakes have all the taste of a cookie with the tender crumb of a cupcake. The secret ingredient is Cinnamon Chips. Hard to find but worth the hunt. I’ve also added a mini Wookiee to the prep but he’s not necessary.
1 1/2 cups all-purpose flour
1 teaspoon baking powder
pinch of kosher salt
1 cup (2 sticks) butter
1/2 cup granulated sugar
1/2 cup brown sugar
3 large eggs
1-1/2 teaspoons vanilla
1/3 cup whole milk
1 cup semi sweet chocolate chips
1/2 cup Hershey’s cinnamon chips
Preheat the oven to 350 degrees. Prep a cupcake pan with liners.
In a medium bowl whisk the flour, baking powder and salt. Set aside.
In the bowl of an electric mixer beat the butter, sugar, and brown sugar. Once combined, add the eggs one at a time, then the vanilla.
Alternate the flour mixture with the milk until combined. This will look like cookie batter!
Fold in the chocolate chips and cinnamon chips.
Fill the liners about 3/4 of the way full.
Bake for 18-20 minutes until a toothpick test comes out clean. Let cool on a wire rack.
