Diet Coke Cupcakes

Myself, I’m more of an original old skool red can Coke kinda gal, but I have a friend who LOVES diet Coke. So as a gift to her I thought it’d be a great idea to incorporate her most favorite thing in the world into a cupcake. Topped with an airy whipped brown sugar frosting – it’s the real thing, baby.

ingredients:
1/2 cup butter
1 cup brown sugar
2 eggs
1/2 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1 cup diet coke

Brown Sugar Whipped Cream Frosting (recipe, here)
gummi Coke bottles

Preheat the oven to 350 degrees and prep a cupcake pan with liners.

In a bowl whisk together the flour, baking powder, baking soda and salt. Set aside.

In the bowl of and electric mixer, cream the butter and brown sugar. Add the eggs and vanilla until combined.

Add the flour mixture alternating with the diet Coke – be careful, it’s foamy!

Once the mixture is combined spoon it into the prepped cupcake pan.

Bake for 15-17 minutes depending on your oven. Let cool on a wire rack.

When the cupcakes are cooled, frost with the Whipped Brown Sugar frosting and top with a gummi Coke bottle!

    Just wanted to know how much diet coke flavor there is in these?
    I have a coworker moving out of state and we are throwing her a party and she loves diet coke and (lex) luther vandross! Maybe I can combine her two loves for her as well!
    I have a friend who just don’t me she just found out she’s allergic to diet coke. I wasn’t aware of so many diet coke lovers, I gotta have the real thing baby 😉

    When I was a little girl and I was sent to bum around town in CA I would go to this little candy shop in the village and a bag of the soda bottle gummies was my candy of choice. Brings back some good memories. 🙂

    If I want to make coke classic cupcakes, can I just substitute the same among of coke for the diet coke? Or do I need to adjust the sugar? Thanks for your blog!!

    I’ve done that since I love classic Coke, and I take the sugar down to 3/4 cup, but frankly, it doesn’t make much of a diff. I’ve forgotten and put in the whole cup and it didn’t taste any more sugary than normal, d’oh!

    (nice name) There is a ‘hint’ of Diet Coke flavor. It’s really hard to replicate soda flavors unless you use extracts, which I hate. But you do get a nice fluffy cake with a touch of flava. 😉

  7. How many cupcakes did this make for you? I went against my instincts and filled the cups all the way up to use up all the batter, and of course, they overflowed. If I were using my brain, I think I could easily have gotten another half-dozen cakes out of it.

    No, never fill the cups to the top – always about 2/3 or 3/4 is best.
