Myself, I’m more of an original old skool red can Coke kinda gal, truth be told Mexican Coke is the bomb. But I have a friend who LOVES diet Coke. So as a gift to her I thought it’d be a great idea to incorporate her most favorite thing in the world into a cupcake. Topped with an airy whipped brown sugar frosting – it’s the real thing, baby.

ingredients:
1/2 cup butter
1 cup brown sugar
2 eggs
1/2 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1 cup diet coke

Brown Sugar Whipped Cream Frosting (recipe, here)
gummi Coke bottles

Preheat the oven to 350 degrees and prep a cupcake pan with liners.

In a bowl whisk together the flour, baking powder, baking soda and salt. Set aside.

In the bowl of and electric mixer, cream the butter and brown sugar. Add the eggs and vanilla until combined.

Add the flour mixture alternating with the diet Coke – be careful, it’s foamy!

Once the mixture is combined spoon it into the prepped cupcake pan.

Bake for 15-17 minutes depending on your oven. Let cool on a wire rack.

When the cupcakes are cooled, frost with the Whipped Brown Sugar frosting and top with a gummi Coke bottle!
