Double Chocolate Muffins

This week is Teacher Appreciation week! Since we have teachers in the family, even more so I feel that it’s really important to show teachers how much they are valued. They work hard every day to better our kids help them become the best they can be.

Having to get up every morning and take care of your own kid is hard enough but to cater to have to deal with a class full of 25+ kids? Keeping a level head can be tough. Since most teachers are running around to get things settled in the morning sometimes it’s nice to give them a little pick me up. Chocolate muffins always hit the spot and even if they aren’t eaten for breakfast, these tender, chocolatey treats make a great afternoon snack.

Easy to make in just one bowl, The Baby made these all by himself and proudly presented them to his teachers. Whether it’s one of these muffins or even just a kind word, show your teachers some appreciation today and everyday, they deserve it!

Double Chocolate Muffins

Ingredients:

2 cups all-purpose flour
1/2 cup cocoa powder
1 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
pinch of salt
1/2 cup (1 stick) melted butter
2 eggs
1 cup buttermilk
1 cup chocolate chips

Instructions:

Preheat the oven to 375 degrees and prep a muffin tin with liners (Makes approx 24)

In a bowl whisk together the flour, cocoa powder, sugar, baking powder, baking soda and salt.

Make a well and add the melted butter, eggs and buttermilk. Stir until just combined, then stir in the chocolate chips.

Spoon the batter into the prepped muffin liners about 3/4 full. Bake for 12-14 minutes, let cool on a wire rack.
