With the weather getting colder, now, I can turn my attention back to warming up the kitchen. This hit the spot.
1 roasted chicken, deboned and cut into chunks
1 bell pepper, diced
1 onion, diced
3/4 cup frozen corn
1 can kidney beans
1 (14 ounce) cans tomato sauce
2 cups water
2 teaspoons chili powder
1 tablespoon dried parsley
1 teaspoon garlic powder
1/2 teaspoon ground cumin
In a pot over medium high heat sauté the bell pepper and onion in a little bit of olive oil until tender.
Add the tomato sauce, water and corn.
In a small bowl, mix together the chili powder, dried parsley, garlic powder and cumin. Add it to the tomato mixture in the pot and simmer for 30 minutes.
Add the cooked chicken, stir until warmed through and serve!
