Everything Bagel Pasta

Hi. I’m an Everything Bagel addict. It’s probably telling, sesame seeds at my feet, crumbs on my shirt, poppy seeds in my teeth, garlic on my breath. I can’t get enough. So much savory goodness all packed into a carb bomb, I absolutely love them.

My local bagel shop makes them fresh and it takes all my willpower not to buy them up. And while no one else likes them but me, there are times when even I can’t eat as much bread as I buy. So I came up with another way to ingest it. Yes, that is the sign of a true addict.

By grinding up the Everything Bagel you get a fragrant, seasoned bread crumb. Ideal for breading or binding, or leaving a trail in the woods. Here I’ve used it in a traditional bread crumb pasta and added pastrami. Basically turned a sandwich, into a pasta dinner! The crumb adds so much flavor you won’t want to go back to regular old breadcrumbs again! Hang on, I think there’s something in my teeth…

ingredients:
1 (16 oz) package spaghetti
2/3 cup everything bagel bread crumbs
1/2 cup olive oil
1/3 cup Parmesan cheese
2 Tablespoons fresh lemon juice
salt and pepper
3/4 cup pasta water
2 cups cherry tomatoes, quartered and seasoned with salt and pepper
1-1/2 cups pastrami, chopped

Chop up the everything bagel and blend or use a food processor to get a fine crumb.

Toast the bread crumbs in a skillet over medium-high heat until brown. Set aside.

In a large bowl, whisk together the olive oil, Parmesan cheese and lemon juice. Set aside.

Boil the pasta according to package directions. Reserving 3/4 cup of liquid before you drain it.

Toss the hot pasta with the olive oil mixture, adding the reserved pasta water a little at a time. Toss the bread crumbs, tomatoes and pastrami and serve.
