Halloween Pinata Cookies

Halloween is just a few days away and it’s one of my favorite times of year. While I don’t get dressed up myself, I love seeing the costumes everyone else puts together and I love the fun (not spooky) decorations. I’m definitely more of a treat than a trick person.

Pinata cookies aka surprise cookies are all the rage on pinterest and it’s because they’re so fun and easy to make. Just stack three similar cookies, cutting out the middle cookie’s center and fill with treats. I found these cute coffin cookie cutters and I knew I could easily turn them into Halloween pinata cookies with just a few cuts. This process can be done to any style cookie cutter with very little effort, making for a great surprise.

Whoever receives these cookies will be thrilled by such a sweet trick. Happy Halloween!

Halloween Pinata Cookies

Ingredients:

3 cups all-purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1 cup (2 sticks) unsalted butter
1 egg

Instructions:

In a bowl whisk together the flour, cocoa powder, baking soda and salt. Set aside.

In the bowl of an electric mixer cream the butter and the sugar. Add the egg.

Add the flour mixture until combined. When it pulls away from the sides of the bowl, the dough is ready.

Wrap up the dough in plastic wrap. Refrigerate until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with silpats.

Halloween Pinata Cookies recipe

Roll out the dough to 3/8″ and cut out a shape using the coffin cutter. This will be the base of the pinata cookie. Transfer to prepped cookie sheets.

For the middle of the cookie, again use the coffin cutter and transfer to the cookie sheet. Then go back in with a knife and cut an outline 1/4″ away from the sides. Remove the center.

Finally, cut out one more coffin and this time press the template down to make an imprint. This will be the top of the pinata cookie. Place the cookies on the prepped cookie sheets.

Bake for 10 minutes, let cool on a wire rack.

Once the cookies have cooled it’s time to assemble. With the white icing and a #2 tip pipe in the details of the skeleton on the top cookie. Let set.

Place the flat, plain coffin cookie down. Using a #7 tip use the frosting to stick the hollow cookie on top of the solid cookie. Fill with candy.

Use the icing to seal the top of the coffin onto the two other cookies, making your pinata cookie complete.
