
Part of Fried Chicken: Three Ways
Why is it Hawaiian? No reason except that it’s in every Hawaiian church cookbook known to man. Everyone has their variation – chicken wings are the preferred way to go, but since I serve it to my kids as dinner, more than appetizer, I like tiny bite sized chunks. Really really tasty.
ingredients:
2 pounds chicken, cut into bite sized chunks
3/4 cup flour
3/4 cup panko
3 Tablespoons garlic salt
1/4 teaspoon pepper
oil for frying
dipping sauce:
1/2 cup soy sauce
1/2 cup sugar
1/3 cup water
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
Start with the sauce by whisking all the ingredients in a small bowl, until dissolved. Set aside.
Prep a pan with oil, I’d say about 1″ deep. Heat to medium high.
In a freezer bag, combine the flour, panko, garlic salt and pepper. Shake to combine. Place the chicken in the bag and shake to coat.

Fry the chicken pieces in the hot oil until nice and brown. Drain on a wire rack – if you drain on paper towels, the chicken just resoaks up that oil, which is pretty sick. You just want nice crispy pieces, not soggy oily ones.

Once all the pieces are cooked, ‘dunk’ them in the dipping sauce and serve.

frying newbie here. i’m so gonna make this tonight, but what do i do with the oil once i’m done frying?
@camille I usually pour the oil into an empty old glass jar, don’t throw it down the sink!!!
Made this recipe last night and wow amazing taste , the dipping sauce is sooo tasty , love the taste of ginger in that sauce. great easy dish to make !

Hey, the chicken tastes great even before dipping! I saved some plain ones for my son to take to the sitter today–his first day back since summer ended, so I want to give him a nice lunch that he will eat. I’ll make him rice with furikake to go with it. My mom, visiting from Hawaii, couldn’t stop going, “mmmmmmm….” for the longest time.
