The key to selling at a Bake Sale is to make something eye-catching! Of course, everything has to taste good but mostly, people buy with their eyes. You have to make something that will catch attention quickly and since I wanted to make sure the school made money, I knew that Yoda and Hello Kitty cupcakes would do the trick!

While the Yoda cupcakes are simple, these Hello Kitty ones take a little bit more time, but not much! Just a little bit of piping and some well placed heart quins and these cupcakes are ready to go!

3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) butter
1 cup sugar
1 egg
2 teaspoons vanilla

black frosting
yellow frosting
red frosting
jumbo red heart sprinkles
frosted cupcakes

In a bowl whisk together the flour, baking powder and salt. Set aside.

In the bowl of an electric mixer cream the butter and the sugar. Add the egg and vanilla.

Add the flour mixture until combined. When it pulls away from the sides of the bowl, the dough is ready.

Wrap up the dough in plastic wrap. Refrigerate until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with silpats.

Roll out the dough and use a Hello Kitty cookie cutter to cut out shapes. You’re only making the head, so just cut the body part away.

Place the cookies on the prepped cookie sheets.

Bake for 10 minutes, let cool on a wire rack.

Using a #2 tip and black frosting, pipe the eyes and whiskers.

Again using a #2 tip, pipe a small amount of yellow frosting for the nose.

For the hair bow use red frosting and a #4 tip to pipe the outline, then press a large heart sprinkle into the frosting to finish off the bow.

Place the finished cookies onto frosted cupcakes and serve!
