Homemade Graham Crackers

Sure you can go to the store and buy graham crackers but they’ll be square and have those little holes all over them. Wouldn’t you prefer graham crackers in the shape of something darker, more menacing, more Galactic? More in the shape of…Stormtroopers.

Place these on top of marshmallow filled chocolate cupcakes and they easily turn into SmoresTroopers cupcakes. These flavorful cookies smell and taste like just store bought graham crackers with one exception, these cookies will do your bidding.

Homemade Graham Crackers

Ingredients:

2 cups whole wheat flour
1 cup all-purpose flour
Pinch of salt
1/4 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/3 cup honey
2 teaspoons vanilla
1/2 cup whole milk

Instructions:

In a bowl, whisk together the whole wheat flour, all-purpose flour, salt, cinnamon and baking soda. Set aside.

In the bowl of an electric mixer, cream the butter and brown sugar. Once combined, add the honey and vanilla.

Alternate the dry ingredients with the milk until combined. When the dough starts to pull away from the bowl, you’re done!

Separate the dough into two disks and wrap in plastic wrap. Keep the fridge until you are ready to use.

Preheat the oven to 350 degrees and prep baking sheets with silpats or parchment paper.

Stormtrooper Graham Crackers cut out

Roll the dough out to a thin 1/8 of an inch. Use the Stormtrooper cookie cutters to cut out the cookies and place onto the prepped baking sheets. If you are making traditional graham crackers, cut squares and use a fork to make holes.

Bake for 12-15 minutes depending on your oven, let cool on a wire rack.

    About how long would these stay good in a container before I crazy and make a ton?

    I love this recipe! It makes fantastic graham crackers and it makes a lot. Using my little 1 1/2 inch leaf cutter, I get about 150 cookie out of one batch. They are perfect for dips and so cute for fall! They also keep well too. I made a double batch and kept them in a zip top bag in the pantry for three weeks before they were all gone. They were still very fresh and keep much better than cookies.
