LG’s Messy Recipe + giveaway!

When I first started blogging I wanted to be able to access my recipes from anywhere and I also wanted to keep track of the meals that the kids enjoyed. I’ve been blogging so long now that the kids know all the steps!

From creating the recipe, to prepping the ingredients and cooking in the kitchen, to the inevitable clean up at the end. In watching their meals being recorded day in and day out the boys have now taken in interest in wanting to make their own food. We talk about what they would make, how it would taste and the best way to cook it.

Since I cook a lot of Mexican food, the kids decided that they were going to take some of their favorite components and make a Mexican Casserole! They talked about what they wanted in the dish and while I helped with cooking the meat on the stovetop, the creation and assembly was all them! LG’s Messy Recipe + giveaway!

Ingredients:

Mexican Casserole
1 pound ground beef
1 Tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
freshly ground pepper
4 cups tortilla chips
1 (14 oz) can refried beans
1/2 cup corn
4 ounces sliced olives
1-1/2 cup shredded cheddar cheese

Instructions:

In a pan over medium heat, brown the ground beef along with the chili powder, cumin, kosher salt, garlic powder, onion powder and pepper. Cook until no longer pink. Drain the grease and set aside.

Preheat the oven to 350 degrees.

In a casserole dish lay out HALF of the chips (2 cups) slightly crushed.

Top the chips with the refried beans and the seasoned ground beef.

Spread the corn and the olives evenly over the top.

Add the rest of the chips (2 cups) and sprinkle with the shredded cheese.

Bake for 15 minutes until the cheese is melted. Serve.

    Every time I make a pie, it’s messy and drips all over my oven because I like to overstuff that sucker. I always forget to put in on a cookie sheet for drips. By far my messiest pie is my gooseberry, blueberry, and plum pie.

    My husband is from Buffalo and he LOVES sponge candy – a type of honeycomb toffee. We live in California, so we always have his sister send him some for his birthday.
    Last year, I decided to make him some myself. I bought a candy thermometer and found a recipe online. The recipe mentioned you had to be really careful when the candy hit 300 degrees – the hard crack stage. I thought I WAS bring careful…but then I added the baking soda.
    Remember that volcano experiment in science class? That’s what my oven suddenly looked like.
    Screaming, and making the biggest mess of my life, I had to frantically clean before the candy cooled and gave my oven a hard candy shell!
    Two tries later, I got it right.
    But I’ll be having his sister send a care package next year.

    I love baking sweet potatoes. They come out best when they’re on the rack, not a baking sheet…but then they always drip and char in the bottom of the oven.

    Bacon! I bake (delicious) thick-sliced bacon on parchment-lined cookie sheets in our oven every weekend. The bacon gets amazingly crispy, but grease splatters EVERYWHERE. I end up with a thick, sticky coating of bacon-y grease on the heating element, racks, and walls of the oven, but it’s so worth it. 🙂

    The recipe that leaves my oven messy is my enchiladas! I stuff the baking dishes full and use lots of cheese and sauce which, even if I cover them, tends to bubble and slosh over the edge when I pull them out 🙂

    Caramel creme tarts with an almond crust! Easily the messiest thing I have made in a very long time. My tart crust separated and although I thought I got it back together, it was still an epic disaster of the smoke billowing out of the oven variety.
