Magic Heart Cupcakes

How do you tell someone you love them? Ruled notebook paper and a pencil? Tweet at them? Or…bake a magic cupcake?!

I went to a get together with friends that I adore. Friends that I can’t live without. And to show them how much I appreciate them I put on an edible magic show. It looks like a regular chocolate cupcake, but when you cut into it, a heart appears! True love and friendship is based on magic strawberry flavored hearts.

ingredients:
strawberry cake (recipe here)
3/4 cup (1-1/2 sticks) unsalted butter
2 cups sugar
3 eggs
1 teaspoon vanilla
2 cups cake flour
1/2 cup cocoa powder
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate milk

Take the already baked pink strawberry cake (this strawberry milk tea cake does quite well) and with a small heart cookie cutter, cut out cake heart shapes and set aside.

Now onto the chocolate cupcake batter. Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In a medium bowl, whisk the flour, cocoa powder, baking powder, baking soda and salt. Set aside.

Cream the butter and sugar until fluffy. Add the eggs one at a time, then add the vanilla.

Alternately add the milk with the dry ingredients until combined.

Spoon batter into the prepped liners, about 1/3 of the way full. Then take the cut-out cake hearts and sit them into the batter, point down. Here’s the one and only tricky part – make sure you remember how you placed the hearts and that they are all facing the same way. This is important for the ‘magical’ effect.

Add more batter on top of the pink hearts, then bake 15-17 minutes depending on your oven, until done. Let cool on a wire rack.

Sometimes the pink cake will pop out a bit if you don’t completely cover it. Don’t worry, it’ll get frosted over later.

Again, remembering which way the heart is facing, frost the cupcakes with chocolate frosting. I suggest setting a little heart quin on top of the cupcake ‘pointing’ to the direction the heart is facing so you don’t forget.

Now the magic! Slice the cupcake down the middle of the cupcake and if you remembered which way was which, you should have a beautiful strawberry cake heart center! This is a great trick but presentation is everything, so remember which way that heart is facing!!
