Mascarpone Chocolate Chip muffins

The Kid is allergic to chocolate so I substitute white chocolate chips. My boys love these muffins because they are soft – the mascarpone adds a nice texture to the muffin.

ingredients:
1 (8 ounce) package mascarpone cheese, softened
1/4 cup butter, softened
1 egg, room temperature
1/2 cup milk
1/2 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup semi-sweet chocolate chips

Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or use paper liners. Beat mascarpone and butter together until fluffy. Beat in egg, cream and vanilla.

Combine the flour, sugar, baking powder and salt. Stir flour mixture into wet mixture until just combined. Don’t overmix! Fold in chocolate chips. If you are using white chocolate chips, use less, they are MUCH sweeter than regular chocolate. Spoon batter into prepared muffin cups filling them 3/4 full.

Bake in oven, about 20 minutes. Take out of pans and let cool on a wire rack. If you can’t find mascarpone, cream cheese works as well, but I like the texture that the mascarpone gives. Try it out!

    Verdict. Very good, I’d probably make them again, but they were a little “greasier” than I anticipated.. and not as pretty as yours. I didn’t get the good muffin top action. (Other than over my pants…) :-(

    They were AMAZING!!!!! I had left over mascarpone cheese and didnt know what to do with it, so I wanted to make muffins. Your recipe was basically the only basic Mascarpone muffin recipe I could find online so I tried it. I put lemon zest instead of chocolate chips and WOW, they were so good!! This will be my new recipe for a basic muffin, because I think anything added to it will be delicious. Thank you
