I had left over mascarpone cheese and didnt know what to do with it, so I wanted to make muffins. Your recipe was basically the only basic Mascarpone muffin recipe I could find online so I tried it. I put lemon zest instead of chocolate chips and WOW, they were so good!! This will be my new recipe for a basic muffin, because I think anything added to it will be delicious.
