Mickey Ears Cake Pops
I was happy to receive a Disney baking package in the mail from a recent #DisneySide twitter party! Inside were some adorable Mickey head cookie cutters and a few other fun surprises. As a fan of Mickey Pops at the park I knew that using these baking tools, I could come up with some great treats.
These cake pops are made of real cake. That is, instead of forming them, I simply baked a chocolate poundcake, cut out the shapes, then dipped them in ganache for “Mickey ears!” Quick and simple, these treats are ready in no time! I can’t think of a better way to show my #DisneySide than with Mickey Mouse and cake!
Mickey Ears Cake Pops
Ingredients:
Mickey Ears Cake Pops
Chocolate Poundcake ingredients:
2 cups all-purpose flour
3/4 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1 1/2 cups (3 sticks) unsalted butter
2 cups sugar
1 teaspoon vanilla
4 eggs
1 cup buttermilk
Chocolate Ganache Ingredients:
6 ounces chocolate chips
2/3 cup heavy cream
additional ingredients:
giant heart sprinkles
wooden ice cream spoons
Instructions:
Preheat the oven to 350 degrees and prep a 9×13 pan with buttered parchment.
In a bowl whisk together the flour, cocoa powder, baking powder, baking soda and salt.
In the bowl of an electric mixer cream the butter, sugar and vanilla.
Add the eggs one at a time, until combined.
Alternate the flour mixture and the buttermilk until the batter is smooth.
Pour the batter into the prepped pan and bake for 35-45 minutes depending on your oven until toothpick tested and done. Let cool.
While the cakes are cooling, start the ganache. In a saucepan over medium heat combine the chocolate chips and the heavy cream. Stir constantly until the chocolate starts to melt. Whisk quickly until combined. Once the ganache comes together, take off the heat and pour into a bowl to cool slightly.
Once the cake has cooled use a Mickey Mouse cookie cutter to cut out pieces of cake.
Push in the wooden ice cream spoons and place on a wire rack. Place in the freezer for 10 minutes to harden up so they won’t fall apart when dipped.
Dip the cake pops into the ganache far enough to make “Mickey Ears.” Add heart sprinkles to make Minnie bows if desired.

My favorite will probably be these cake pops. I love cake pops, but most don’t give you more than a bite of cake.. these… are awesome! At Disney, I love the ice cream… I also love the Disney Rice Krispy treat pops… Geez, so many how can I choose just one favorite!!!
It’s a toss up – I do love the cake pops, especially the vanilla! But Dole Whip is so nostalgic!

I made these cake pops at home with my friend. They tasted terrible. We even add choco chips. Still, these cake pops were AWEFUL!! I just wasted loads of ingredients on these cake pops. The only good thing about them was that they looked cute because MICKEY MOUSE!!
