Mini Chicken Pot Pies

The only pot pie I knew growing up were the ones in the frozen dinner section. It wasn’t a regular meal at our house, yet it was filled with all my favorite things—chicken, potatoes, veggies—all in a thick soupy gravy and topped with a heft of pastry. All the good things in life. Yet I never ate them regularly.

Making these into individual servings, almost like a side dish, makes these little ramekin pot pies all your own. Serve it with a salad and you have a filling, hearty meal that’s especially fun for little ones to enjoy.

Mini Chicken Pot Pies

Ingredients:

2 Tablespoons unsalted butter
1/2 onion diced small
2 carrots, diced
1 clove garlic
2 Tablespoons all-purpose flour
1 (14 oz) can chicken broth
1 potato diced small
1/2 cup corn
1/2 cup peas
2 cups cooked chicken, cubed
1 package frozen pie crust
butter
salt

Instructions:

Melt the butter in a skillet over medium heat, and add the carrots, onion and garlic. Cook until the onions and carrots are softened.

Add the flour and cook through until you get a nice roux, about 5 minutes. Add the chicken broth, cooking over high heat until just boiling.

Once boiling add the potatoes, corn, peas, and chicken. Bring to a boil again, then turn off the heat.

Prep your ramekins by greasing them with melted butter. This recipe makes 4 medium sized 5″ souffle ramekins or six small 3″ ones.

Spoon the chicken mixture into the prepped ramekins.

Preheat the oven to 375 degrees.

Roll out the dough and cut it fit the top of the ramekins with an overlap of about 1/2-inch. Cut your traditional vent slits into the top, oruse a teeny heart cutter to cut a hole.

Cover the filling and press the edges onto the sides of the ramekin. Butter the tops of the dough using a silicone brush and sprinkle lightly with salt.

Place the ramekins on a baking sheets and bake for 30 minutes. Let cool slightly, then serve.

    I love the idea of smaller servings. Individual portions just look so much more appetizing. Where did you get those handy cafeteria-style trays from?

    Those kid trays are from Pottery Barn Kids but you can get them at Target also.
