mini French Breakfast Muffins

This recipe is so simple but the taste is fantastic.It’s a one bowl recipe, which means the Kid can do most of it himself because the steps are simple. Also, I like them better as mini muffins, but that’s just me. I love the mini.

ingredients:
2 cups flour
2/3 cups sugar
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 large egg
1 cup + 2 tablespoons milk
5 tablespoons butter, melted and cooled
1 teaspoon vanilla

cinnamon sugar topping:
2 Tablespoons butter, melted and slightly cooled
1/2 cup sugar
1 teaspoon cinnamon

Heat the oven to 375 degrees. Line the cups of a mini muffin tin with liners – this should make about 30 mini muffins.

In a bowl, whisk together the flour, sugar, baking powder, salt and nutmeg. Set aside.

In another bowl, whisk the egg til frothy. Add the milk and the vanilla, finally whisking in the butter.

Make a well in the dry ingredients and pour in the liquid. Mix until blended. Spoon into the mini muffin cups.

Bake for 15 minutes, until a toothpick comes out dry. I immmediately take them out of the pan and let them cool on a wire rack. You do not want them to keep cooking.

Prepare the topping by stirring the cinnamon and sugar together in a bowl.

Working one muffin at a time, dip the tops in the butter, then the cinnamon sugar, rolling to cover the muffin top.

The mini-ness is too cute and just the perfect size.

    Those are adorable. Where do you get those paper liners? It really sets these apart if you are looking at a table of goodies to choose from!

    When I tried them as regular sized muffins, they came out perfectly. When I tried them as minis, the bottoms stuck to the liners… I’m a novice baker… do you know why this happened? Am I cooking them too long?

    I made them just now and ate a few…they were so simple to make and yummy! Unfortunately, my son just licked the tops off, but he really enjoyed himself, so it was worth it. He is more of a chocolate fan, at 22 months.

    I only discovered your blog last night when I Googled “baked corn dogs”, and I am hooked. Is there a way I can find out more about your story? I grew up in Hawaii and wondered if you did too, seeing that you have an affection for the King’s Bakery sweet bread. We used to go eat at the old restaurant all the time…I’d have the French bread and I think it was my mom who would have the fried saimin.

    I am so excited that this blog exists, and I can’t wait to try more of your recipes!
