mini brownie cupcakes

This recipe is vegan. And it’s O.G.‘s fave. You don’t seem to understand how completely wrong that is. The woman loves to eat dead animals+biproducts more than anyone. Steak. Eggs. Milk. Butter. She can’t get enough. But when I made these for her she asks for them over and over. Sure, she calls them VAYGAN, but whatever.

2 cups all purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
1 cup water
3/4 cup vegetable oil
1 teaspoon vanilla
2 Tablespoon coffee
1 cup mini chocolate chips (most chocolate chips aren’t vegan, so if you want to stay true to it, don’t add these, you won’t miss them)

Preheat the oven to 350 degrees. Prep a mini cupcake pan with liners. I like to use the yellow liners whenever I do anything chocolate because it looks like little sunflowers.

In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in the water, oil, vanilla, coffee and mix well. Can this get any easier?

Stir in the chocolate chips if you are using them.


Pour into the prepped cupcake pan.

Bake for 15 minutes. When they come out of the oven, they will be soft, but don’t worry, they’ll harden up quickly therefore, DON’T OVER BAKE!! Let cool on a wire rack.

These come out not to too sweet or oily, as can be the case with some vegan baking. These are so good you won’t even miss the eggs or butter!

  2. My Dad loves chocolate. I am going to make these for him for his birthday. Do they have the consistency of Two Bite Brownies by any chance? Where do you get your muffin liners, they are so cute!!!

    I don’t know what two bite brownies are, but these are kind of crispy on the top and chewy in the middle. Depending on your cooking time, you can make them ‘gooey’-er if you like, I just don’t care for that consistency.

    I got the muffin liners at Surfas, in Los Angeles.

    The only comment I have is that the batter made two batches of 24 mini muffins!

    I love the cupcake holders! :) The brand Enjoy Life has great vegan chocolate chips if you can find them…..

    I was a bit skeptical about these at first because of the lack of egg and butter, but I made them a few days ago and they are LUSH. My uni flatmates can’t get enough of them.

    I just made these, and they are absolutely fantastic! One problem I always get with vegan baking however is that they get stuck in the bottom of the wrappers. Any ideas why? Even with careful tearing of the paper about two thirds down the cupcakes will break up.
    Anyway I can live with that, it’s what spoons were made for, these tasted so good and I can’t wait for my omni flatmates to eat them!

    oooooooh…I made these using brown rice flour and only one cup of sugar, and they are great!! Also so easy, no machines involved. I didn’t use any liners, either. I can’t stop trying your recipes, Jenn! Have you ever kept track of how many recipes your readers have tried? It should be a competition called, “The Quest for JENN’s Biggest Fan” or “Most JENN Recipes Made by a Single Reader”… you could make T-shirts as prizes! I love cute T-shirts…

    OMG these brownies/cupcakes are AMAZING. Just like you, I don’t have enough eggs or butter to whip up something for a Halloween work event tomorrow… and I was too lazy to go to the store. Very easy recipe!!! Delicious brownies! Now I’m about to melt some white chocolate disk and add some orange food coloring to decorate these yummy vegan cupcakes!
