Nutella Hamantaschen

Growing up I had a lot of Jewish friends and so I knew about all of the holidays. Hamantaschen is eaten at Purim, a holiday that celebrates the Jews deliverance from Haman’s evil plot. It’s a cookie that represents Haman’s three cornered hat. Perhaps you’ve heard of the idiom, “I’ll eat my hat!” said when something surely won’t happen, since the plot was foiled we are in fact eating his hat and it’s delicious!

Hamantaschen are traditionally filled with poppy seed or prune filling but I like to fill mine with Nutella! Everything’s better with Nutella and it seems like a match made in heaven for hamantaschen. The real secret to good hamantaschen? It’s all in the folding…

Nutella Hamantaschen

Ingredients:

3 cups all-purpose flour
1/2 teaspoon baking powder
pinch of salt
1 cup (2 sticks) unsalted butter
1 cup sugar
2 eggs
2 Tablespoons orange juice
1/2 teaspoon vanilla
Nutella

Instructions:

In a bowl, whisk together the flour, baking powder and salt.

In the bowl of an electric mixer cream the butter and sugar.

Add the eggs, orange juice and vanilla.

Add the flour mixture until combined.

Separate the dough into two and wrap in plastic wrap. Chill in the fridge until ready to use. This dough always needs to be nice and cold. If it starts to warm up and get sticky, simply put in back into the fridge for a few minutes.

Preheat the oven to 350 degrees and prep baking sheets with silpats.

Roll out the dough to 1/8″. Use a 2-1/2 inch biscuit cutter to cut out circles and place them on the prepped baking sheet.

Place approximately 1 teaspoon of Nutella into the center of the circles.

The trick to these cookies is the folding. The first fold is the left edge of the circle, right over part of the Nutella.

The second fold is the right side, slightly overlapping the top of the first fold.

The third fold is upwards, overlapping the edges of the first two folds. Pinch the edges slightly if they are open. Repeat these steps for the rest of the dough circles, then bake for 10 minutes. Let cool on a wire rack.
