Onolicious Chili

In my old Hawaii cookbooks I came across a recipe for ‘Ono Chili.’ Ono means delicious so I knew this had to be good, especially since it had three different kinds of meat. Hold on to your heart attacks!

This cookbook was so old that it didn’t give actual measurements for the ingredients! Instead I cobbled together my own version and no kidding, this is some ONOLICIOUS chili!

I usually like to make recipes that are simpler to follow, but all these steps lead to a really fantastic tasting chili that is well worth the chopping and setting aside. This Onolicious Chili is the perfect meal for summer parties!

Onolicious Chili recipe

Onolicious Chili

Ingredients:

4 slices of bacon, diced
1 Portuguese Sausage
1 pound ground beef
3 stalks of celery
1 medium onion
1 bell pepper
1 28 oz can stewed tomatoes
1 14 oz can tomato sauce
1 can kidney beans
2 Tablespoons vinegar
1 teaspoon Worcestershire sauce
2 Tablespoons chili powder
2 Tablespoons brown sugar
2 bay leaves
1/2 teaspoon salt
1/2 teaspoon pepper

Instructions:

In a large stock pot over medium high heat, cook the bacon until crispy. Drain and set aside.

Pour out the grease, then in the same stock pot, brown the Portuguese sausage. Pull out the sausage and set aside.

Drain the stock pot of excess fat AGAIN, then brown the ground beef until no longer pink. Set THAT aside – there’s a lot of setting aside going on here.

Drain off the excess fat from the pot just one more time. Add the celery, onion and bell pepper. Cook until soft.

Add the stewed tomatoes, tomato sauce, kidney beans, vinegar, Worcestershire Sauce, chili powder, brown sugar, bay leaves, salt, and pepper.

Stir in the bacon, Portuguese sausage, and ground beef back into the pot.

Simmer on low for one hour, then serve.

    If I can’t find Portugese Sausage, is there a good alternative? Chorizo?

    Oh, I’m totally going to make this before school starts. Fuzz loves chili. I may have to use some sort of German sausage or Chorizo, though.

    BTW. I made your Eggplant Parmesan. It was good, but I cut it too thick and the texture just wasn’t something we loved. I’m going to try it again with really thin slices of eggplant. I’m not sure our family will ever like eggplan, but for some reason I want to learn interesting ways to prepare it.
