When my kids go trick or treating I’m always thrilled when we go up to the door and they are handing out Peanut Butter Cups. The kids are disappointed because they don’t eat them but hey I DO, so why not trick or treat vicariously?
A chocolate cupcake with sweetened peanut butter filling and the whole thing topped off with an entire Peanut Butter Cup – my homage to the most popular Halloween candy!
3/4 cup (1-1/2 sticks) butter
1-3/4 cups sugar
1 teaspoon vanilla
2 cups cake flour
1/2 cup cocoa powder
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate milk
2 Tablepoons butter, softened
1 cup peanut butter
2/3 cup powdered sugar
pinch of salt

Start with the cupcakes. Preheat oven to 350 degrees. Prep a cupcake pan with liners.
In a medium bowl, whisk the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
Cream the butter and sugar until fluffy. Add the eggs one at a time, then add the vanilla.
Alternately add the milk with the dry ingredients until combined.
Spoon the batter into prepped liners, bake 15-17 minutes depending on your oven. Let cool on a wire rack.
When the cupcakes are cooled core out the center of the cupcakes (not all the way down!) and set aside.
In a small bowl stir together the butter, peanut butter, powdered sugar and salt. Pipe or spoon the filling into the cored out cupcakes.
Top with chocolate frosting and a peanut butter cup!
