perfect turkey gravy

I say perfect, because that’s what it tastes like: perfection. My entire life I can remember my mom standing at the stove at Thanksgiving, measuring, pouring, whisking and then triumphantly coming to the table with a bowl full of delicious homemade gravy. I always thought it was magic and in a way it was because no matter how much I watched, I never seemed to ‘get it’.

Finally after all these years I now understand the ratios and the flavors and it’s amazingly easy. It’s not Thanksgiving without my mom’s magic gravy. Serving this in a mini gravy boat per person is not a necessity but it sure is adorable.

perfect turkey gravy

Ingredients:

2 Tablespoons pan drippings from roasted turkey
2 Tablespoons butter
4 Tablespoons flour
2 cups turkey stock
2 chicken bouillon cubes
1/8 tsp. ground black pepper
Salt to taste

Instructions:

When you’re basting your turkey and suctioning out all that fat, save it on the side – here’s where it’s useful!

In a pan add the turkey drippings, butter and flour. Stir continuously over medium high heat until browned. Do not let the mixture burn.

Take pan off the heat and add the turkey stock. Turn the heat on again and whisk over medium heat until thickened and bubbly.

Add the bouillon cubes and stir until dissolved.

Add the black pepper and season with salt to taste.
