The weather is heating up in SoCal and so is my brain trying to come up with ways to stay cool. Let’s just say my ice cream maker is getting a full workout lately.
Pomegranate Juice is great source of antioxidants and I thought it’d be a lot of fun to make some sherbet out of it! Topped with some chocolate covered pomegranate seeds makes it into a fun, elegant party dessert!
ingredients:
2 cups Pomegranate Juice
1/2 cup sugar
1/2 cup orange juice
1 cup plain yogurt
In a bowl whisk together the pomegranate juice, sugar, orange juice and yogurt.
Whisk until the sugar has dissolved, then pour the mixture into the base of your ice cream maker and turn on according to manufacturer’s directions.
When it’s done the ice cream will start ‘climbing’ up, then you know it’s ready! Scoop the ice cream into a freezer safe airtight container to harden or keep until you are ready to serve.
I found these chocolate covered pom seeds and I couldn’t wait to use them in something. They seemed like the perfect crunchy topping for this frozen dessert!
