Hello Kitty cookie face cupcakes

My love of Hello Kitty knows no end and when it comes to baking I incorporate her into cupcakes, cookies and anything else you can imagine! Everyone loves Hello Kitty so I knew that making Hello Kitty cupcakes for the school bake sale would be sure to make money for the school!

Making an ordinary dessert eye-catching is easy when you use cookies as cupcake toppers. Plus there’s nothing better than two desserts in one! I made up some cupcakes, frosted them and then topped them off with a simple to decorate Hello Kitty face cookie. It looks like more work than it is, but just a little bit of piping and some well placed heart quins and these cupcakes were quick to make and ready for the bake sale!

Hello Kitty cookie face cupcakes

Ingredients:

you’ll need:
Hello Kitty cookie cutter
black icing
yellow icing
red icing
jumbo red heart sprinkles
frosted cupcakes

cookie ingredients:
3 cups all-purpose flour
1/2 teaspoon baking powder
pinch of salt
1 cup (2 sticks) unsalted butter
1 cup sugar
1 egg
2 teaspoons vanilla

Instructions:

In a bowl whisk together the flour, baking powder, and salt. Set aside.

In the bowl of an electric mixer cream the butter and the sugar. Add the egg and vanilla.

Add the flour mixture until combined. When it pulls away from the sides of the bowl, the dough is ready.

Wrap up the dough in plastic wrap. Refrigerate until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with parchment or silpats.

Roll out the dough and use a Hello Kitty cookie cutter to cut out shapes. You’re only making the head, so just cut the body part away and reuse the dough.

Place the cookies on the prepped cookie sheets.

Bake for 10 minutes, let cool on a wire rack.

Using a #2 tip and black icing, pipe the eyes and whiskers.

Again using a #2 tip, pipe a small amount of yellow icing for the nose.

For the hair bow use red icing and a #4 tip to pipe the outline, then press a large heart sprinkle into the frosting to finish off the bow.

When the icing is dry, place the finished cookies onto frosted cupcakes and serve!
