I LOVE your recipes! your kids don’t know how lucky they are to have you as their mom. i was wondering – if i doubled this recipe, could i bake it in a 9×13 pan like your blueberry mochi cake recipe? i’m too lazy to do cupcakes but i LOVE the sound of this recipe.

i just made a vegan version of these w/egg replacer (potato starch and tapioca flour) and whole wheat instead of all purpose flour. they turned out great! thanks jenn for such a great recipe! yay for mochi!

I’m new to the baking scene . . . in the Mochiko Strawberry Cupcake recipe, when boiling the strawberries, is liquid added to the strawberries, or just the juices that come from the strawberries is enough?

I don’t usually overmix either…it just seems to be a problem for me with pancakes!!

I picked up some Mochiko at Wegmans yesterday…hopefully I will try out some recipes over the weekend! Thanks again!
