Strawberry Green Tea Cupcakes

Yogurt cupcakes but with a twist, a nice green ribbon twist to be exact. Flavorful strawberry yogurt plus matcha gives the prettiest little pink and green cupcakes ever. These are just as moist and delicious as they are pretty!

However, I must admit…I cheated. I added two drops of pink food coloring cause the strawberry yogurt just wasn’t giving me that pink Pantone color that I so desired. Designers. We’re never satisfied.

Strawberry Green Tea Cupcakes

Ingredients:

1-1/2 cups cake flour
1 teaspoon baking powder
2 eggs
1 cup sugar
1/2 cup strawberry yogurt
1/2 cup (1 stick) unsalted butter, melted
2 drop pink food gel dye
1 tablespoon green tea matcha powder
1 tablespoon sugar
1 tablespoon milk
powdered sugar for dusting

Instructions:

Preheat the oven to 350 degrees F. Prep a cupcake pan with liners.

In a bowl, whisk together cake flour and baking powder.

In the bowl of an electric mixer, beat the eggs and sugar until combined.

Add the flour mixture, alternating with the yogurt, until combined.

Stir in the melted butter.

In a medium bowl, stir the matcha powder, sugar, and milk, forming a paste. Stir in half the cake batter until it turns a lovely green.

Stir in the food gel dye into the rest of the batter.

In prepped liners, alternate the two batters by spoonfulls until 3/4 of the way full.

To get the nice marbled look, take a knife make figure 8s in the batter.

Bake for 15-17 minutes, depending on your oven. Let cool on a wire rack.

Dust with powdered sugar to serve.

    Where can I find that particular green tea powder? I live in Central Florida? Would I go to an Asian market or do I order it through the internet?? Plz, help. I would like to make this for my friend whose favorite colors are Pink and Green.

    @classichick I would try a local asian market in the tea section. Otherwise you can look online but I’m sure with shipping it’s pretty pricey.

  6. Green tea with Strawberry…yummy…I liked it very much as I find green tea very bitter so it will change its taste and turn it to little sweeter side.
