One night I had no idea what to make for dinner, I threw this together quickly and now it’s become almost a weekly meal. The kids love it because it’s so full of comfort and flavor. I love it because it takes minutes to prepare!
ingredients:
1 lb thinly sliced beef (shabu shabu meat, sukiyaki meat…)
1/2 onion, thinly sliced
1/3 cup soy sauce
1/3 cup mirin
3 Tablespoons sugar
1 Tablespoon cornstarch
2 Tablespoons water
In a bowl combine the soy sauce, mirin and sugar. In a small bowl combine the cornstarch and water to make a runny paste. Add that cornstarch mixture to the soy sauce mixture and stir well.
In a pan over medium-high heat, saute the onions until soft. Add the thinly sliced beef until just cooked through. This will only take a few minutes since the beef is so thin.
Pour the soy sauce mixture over the meat in the pan. Cover and let simmer for 5 minutes until the sauce thickens.
Serve over hot rice. With lightsaber chopsticks.

Looks so good. My stomach is growling! Time to find lunch.
