My friend Thom Zahler is known as the very talented artist and writer of Love and Capes but he also just released his very first My Little Pony comic from IDW! The book features Twilight Sparkle, who also happens to be my favorite pony because she loves to read! A good trait to have indeed.
These cookies require a little bit of piping but if you’d rather just leave them plain I’m sure any pony/cookie fan would love them just the same!
3 cups all-purpose flour
1/2 teaspoon baking powder
1 Tablespoon lemon zest
pinch of salt
1 cup (2 sticks) unsalted butter
1 cup sugar
1 teaspoon vanilla
violet food gel dye
In a bowl whisk together the flour, baking powder, lemon zest and salt. Set aside.
In the bowl of an electric mixer cream the butter and sugar. Add the egg and vanilla.
Add a few drop of violet food gel dye and stir.
Slowly add the flour mixture until combined. The flour will lighten the color so add more food gel dye if necessary.
Mix on medium high until the dough pulls away from the bowl.
Separate the dough into two discs and chill in the fridge.
When you are ready to bake, preheat the oven to 350 degrees and prep baking sheets with silpats.
Roll out the dough to 3/8″ thick. You want to see all the impressions. This cutter is a bit tricky so dip it in flour before pressing down.
Move the cookies to the prepped baking sheets and bake for 10 minutes. Let cool on a wire rack.
To ice the cookies I do the white of the eye first, followed by the black pupil. I feel comfortable using the very small #2 tip, but a #3 or #4 will work as well.
I went in to detail Twilight Sparkle’s pink highlights as well as the cutie mark. The cutie mark is very small so def a #2 tip works best.
