Tofu frosting is a possibility, people. If you’re thinking stinky and crumbly think again because silken tofu is as smooth as…well, silk! A soft buttery consistency it is a wonderful alternative to butter and makes for a creamy, chocolatey, vegan frosting.

8 ounces silken tofu
pinch of salt
1 teaspoon vanilla
1/2 cup cocoa powder
6 cups powdered sugar

Silken tofu can be found in the refrigerated section but shelf stable boxes are also available for your pantry.

In the bowl of an electric mixer on low, combine the tofu, salt and vanilla. Add the cocoa powder until mixed through.

Add the powdered sugar a little at a time until fully combined, turn the mixer up until you get a ‘creamy’ consistency.

Use to frost cakes, cookies or cupcakes. (Hobbit, not vegan.)
