Bacon and Potato Taquitos

One thing I could eat everyday forever would probably be taquitos. Rolled and fried, they are absolutely delicious and not very good for you. Thus the deliciousness.

By baking them in the oven you’d be surprised at how crisp and as close to the real thing as they get. Sure I’ve stuffed these with bacon, but we’re taking small steps here. If you already have leftover baked potatoes you’re already ahead of the game!

ingredients:
1 russet potato
salt and pepper
4 slices of bacon, cooked and crumbled
1/4 cup cheddar cheese
6 corn tortillas
4 Tablespoons unsalted butter, melted

If you don’t have a baked potato simply preheat the oven to 350 degrees. Prep a baking sheet by lining it with foil, then placing a cooling rack on top.

Wash and scrub the potato then pat dry. Rub olive oil over the skin and sprinkle the kosher salt all over the oil rubbed potato. Place on the rack on the prepped sheet pan and bake for one hour.

Set the oven to 375 degrees. Prep a baking dish with parchment. Set aside.

Scoop out the potato into a bowl and mash it slightly with salt and pepper.

Lay out the corn tortilla and add a spoonful of the mashed potato down the center. Sprinkle with the cooked bacon, then some cheddar cheese.

Carefully roll up the taquitos, securing them with a toothpick (You’ll remove these later.) and place them seam side down in the prepped dish.

Once they are all rolled, brush with melted butter. Bake for 15-20 minutes until browned and crisp.

Take the toothpicks out before serving and serve with salsa and guacamole.
