Tasty Pancakes
I can’t stand an ugly pancake. Perhaps you’ve made them and had those awful dark circles around the edges with discolored centers appear. That’s because the heat is too high. This often happens with the first batch so simply turn down the heat and have a little patience.
Pancakes should be evenly browned. Don’t worry, the pancakes will talk you through it! Once the bubbles appear and start to pop, it’s time to flip!
Plain and simple, pancakes are one of the most comforting breakfast foods. Try adding some fruit, a swirl of peanut butter even some cooked meat and pancakes can turn into a satisfying meal any time of the day!

Tasty Pancakes
Ingredients:
2 cups all-purpose flour
1 Tablespoon sugar
1 Tablespoon brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1-1/2 teaspoons vanilla
1-1/2 cups whole milk
1 Tablespoon melted butter (plus some for the pan)
Instructions:
In a bowl whisk together the flour, sugar, brown sugar, baking powder and salt.
Make a well and stir in the eggs and vanilla, adding the milk until just combined. Stir in the melted butter at the end.
On medium high heat, prep a griddle by greasing it with butter. Pour the batter into nice little circles.
Now to make your pancake custom, sprinkle ingredients on top of the batter. Savory or sweet: blueberries, bananas, chocolate chips, cooked sausage makes a good addition as well.
Once small bubbles appear in the batter and start to pop, that’s how you know it’s time to flip. Cook until browned and cooked through and serve.
Every Sunday is Pancake Day at our house! We have them with white chocolate chips – YUM!

I actually love when my pancakes are all lacy like in your x’d out picture on the left. We used to make matzah meal pancakes growing up, and if the heat was high enough and there was enough butter, you’d get delicious crispy edges. Yum. On regular pancakes or buttermilk, I still tend to like that lacy texture. Though usually, once I crank up the heat to heat the pan, do the first batch, and crank it back down again, they come out all even.
