Apple Berry Bars
We eat a lot of fresh fruit around here, especially in the summertime. Sometimes when I go to the Farmer’s Market I get a little over enthusiastic and find myself with a lot more fruit than I bargained for. Not wanting to let the beautiful fresh fruit go to waste, I always try to use it up in a bunch of different ways and of course, dessert is always a crowd pleaser.
These bars have a shortbread crust, a sweet crumbly topping, and sandwiched in between is a layer of mixed apples and berries. Ideal for a bake sale or potluck, this is a great way to take advantage of seasonal fruit!
Apple Berry Bars
Ingredients:
crust ingredients:
3/4 cup (1-1/2 sticks) unsalted butter
2 cups all purpose flour
1/2 cup powdered sugar
1/4 teaspoon cinnamon
pinch of salt
filling ingredients:
6 apples, peeled, cored and sliced thin
3 Tablespoons butter
1/4 cup brown sugar
1 Tablespoon lemon juice
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
dash of nutmeg
pinch of salt
1 cup blueberries
topping ingredients:
1/2 cup (1 stick) butter, softened
1 cup oats
1 cup flour
1 cup brown sugar
1 teaspoon cinnamon
pinch of salt
Instructions:
Preheat the oven to 350 degrees. Line a 9×13 pan with parchment.
In the bowl of an electric mixer mix the butter, flour, powdered sugar, salt and cinnamon into a soft dough.
Press it into the parchment lined pan and prick slightly with a fork.
Bake for 10 minutes. Set aside.
In a skillet saute the thinly sliced apples with the butter, brown sugar, lemon juice and vanilla. Add the cinnamon,salt and nutmeg. Simmer on low until the apples are soft, approx 15 minutes.
Pour the apples onto the crust and sprinkle the blueberries on top.
In a bowl cut together the butter, oats, flour, brown sugar, cinnamon and salt to make the topping. Crumble on top of the fruit mixture.
Bake for 25 minutes until bubbly. Let cool and cut into squares.
