Banana Brioche French Toast

Anyway, the next best thing was to make something even better. A few bananas, some brown sugar and a custard and in an instant you have the most delicious, comforting breakfast dish ever. Banana Brioche baked french toast!
ingredients:
12 brioche rolls or 1 loaf of brioche bread, stale is better
2 bananas, sliced
5 eggs
2-1/2 cups milk
1 Tablespoon brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
pinch of salt
butter for pan
2 Tablespoons brown sugar
Preheat the oven to 350 degrees and grease a 9″x13″ baking dish with melted butter.
Slice the rolls or brioche loaf into 1 inch thick pieces. Lay the brioche it in the pan sort of overlapping however you like, just so the pan is full and there isn’t too much movement for the bread.
In a medium bowl stir the eggs, milk, brown sugar, cinnamon, vanilla and salt.
Add the sliced bananas, then sprinkle the brown sugar over the top.
Bake for 30 minutes until the top is nice and crispy and the custard has set. Serve with syrup.
