Banana Pudding Pi(e)

This week Thursday is 3.14 aka Pi Day, yay for nerdy holidays! Last year I made Pi(e)s on a stick which became super popular and was even featured on Pillsbury.com! This year I made individual pies again, because who wants to share pie??

I decided to take creamy, delicious banana pudding and turn it into mini pies. You’ll have to look closely to catch the subtlety of my Pi references here, Pi is all around us. And so is pie…yum.

Banana Pudding Pi(e)

Ingredients:

1 cup Nilla Wafers, crushed fine
3.14 Tablespoons butter, melted
1 banana
3.14 ounces vanilla pudding mix
1-1/2 cups whole milk
1 cup heavy whipping cream
3.14 Tablespoons powdered sugar
1 banana
sugar

Instructions:

To make the crust, mix together the crushed Nilla Wafers with the butter. Press into six individual 4-1/2″ round pie pans.

Slice one of the bananas into thin rounds. Lay them on top of the crusts.

Banana Pudding Pies for Pi Day

Make the pudding by whisking together the vanilla pudding mix and the whole milk for 5 minutes, until thickened. Pour evenly into the 6 pie pans on top of the bananas.

In the bowl of an electric mixer whip the heavy whipping cream with the powdered sugar until stiff peaks form. Spread evenly amongst the 6 pies.

Take the remaining banana and slice it into 18 discs. Using small cutters, cut the numbers 3, 1, 4 into the bananas and sprinkle with sugar.

Place the bananas on top of the pies and serve!

    I love this! My math teachers in middle school/high school would bring in pies (or round cakes) for Pi Day, so I encourage the eating of round things on March 14.
