BBQ Roast Beef Sandwiches
Summer is just around the corner, I love the feeling of those lazy days when the sun is shining and the weekends feel like they could last forever. Summertime food is the best because every day feels like it could be a picnic. The flavors of bbq, salads and fresh fruit, summertime flavors are always full of relaxation and happiness.
We’re not quite there yet, but there’s a way to get those summer flavors right now! Roast beef made in the crock pot will be tender and delicious, plus you can let the slow cooker do all the work for you. Top it off with homemade BBQ sauce and you have an easy to prep dinner that’s sure to make you feel like you’ve just had a relaxing summer day.
crock pot beef ingredients:
3-4 lb chuck roast
1 onion, sliced
1 clove garlic, minced
2 Tablespoons Worcestershire Sauce
2 Tablespoons brown sugar
1 Tablespoon chili powder
1 teaspoon cumin
1 teaspoon salt
freshly ground pepper
1 (14 ounce) can beef broth
bbq sauce ingredients:
1 cup ketchup
2 Tablespoons apple cider vinegar
1 Tablespoon Worcestershire Sauce
1 Tablespoon brown sugar
1-1/2 Tablespoons honey
1/4 teaspoon ground mustard
freshly ground pepper
1 Tablespoon cornstarch
1 Tablespoon water
Place the sliced onions in the bottom of the crock pot bowl and lay the chuck roast on top.
In a small bowl, whisk the garlic, Worcestershire Sauce, brown sugar, chili powder, cumin and salt and rub into the roast. Season with freshly ground pepper.
Pour the beef broth into the crock pot, turn on high for 6-8 hours.
For the bbq sauce, in a saucepan over medium heat, combine the ketchup, apple cider vinegar, Worcestershire Sauce, brown sugar, honey, ground mustard and pepper.
In a small bowl, stir together the cornstarch and water. Bring the sauce to a boil then add the cornstarch mixture, whisking well until the sauce starts to thicken. Lower heat and let cool slightly.
Place the roast beef on sandwich buns and pour the bbq sauce on top to serve.

Just made this recipe tonight and it’s soooo good! Halved the recipe as I was using a small roast Imhad in the freezer.
