Beast Boy Vegetarian Burritos

My kids are obsessed with Teen Titans Go. Scratch that, I’m obsessed with Teen Titans Go. Animated shows aren’t just for kids, the humor is smart, hysterical and incredibly entertaining.

Teen Titans Go is a DC Comics animated series that has been revamped several times and airs on the Cartoon Network. The camaraderie (and sometimes confrontation) amongst the team is the driving force that makes the characters so likable. Beast Boy and Cyborg are BFFs but they are at odds on one subject: Burgers v Burritos. Ah, the universal question.

Beast Boy is always green and has the power to morphs into other animals. He’s is also a vegetarian. The Baby LOVES Beast Boy and after seeing the Burrito song, asked me to make burritos for dinner.

So naturally, what else would I make except green tortilla veggie burritos? The Baby even drew me a Beast Boy sketch to go with this post. I’m sure the Baby will be asking for Cyborg burgers next week…

Beast Boy Vegetarian Burritos

Ingredients:

1-1/2 cups uncooked white rice
1-1/2 Tablespoons olive oil
1 onion, chopped
1 clove garlic, minced
1-1/2 cups water
2 tomatoes, diced
1 Tablespoon tomato paste
2 teaspoons chili powder
1/2 teaspoon cumin
salt and pepper
spinach tortillas
1 cup beans
shredded cheese

Instructions:

Heat the olive oil in pan over medium high heat. Saute onions and garlic until soft.

Add the rice and stir until that also softens.

Pour in the water and add the tomatoes and tomato paste.

Add the chili powder, cumin, salt and season with pepper. Cover, and simmer for 15-20 minutes, until the rice is cooked and liquid has evaporated.

Take the cover off and cook for 5-10 minutes to get the moisture out. Stir to fluff up the rice.

Heat the tortillas for 15 seconds in the microwave or in a hot pan.

Place on a flat cutting board and spread 2-3 Tablespoons of the beans down the center.

Add a heaping spoonful of rice on top, then sprinkle with cheese. You can add grilled veggies should your little one be one board with it, otherwise rice and beans will do just fine! Now you’re ready to roll!

Here is the best way to roll a burrito without having the ingredients fall out:

1. Fold it in half
2. Pull in the two sides
3. Roll it over onto the seam side

Now your green Beast Boy veggie burritos are ready! So good and fun to eat!
