Beauty and the Beast: Cheese Soufflé
In Beauty and the Beast there are many dishes that Lumière rattles off during “Be Our Guest,” beef ragout, pie and pudding flambé, but one that stuck with me was cheese soufflé. A French egg-based dish, souffles are light and as fluffy as air.
Soufflé is easier to make than it sounds, take your time and you will be rewarded. Prepping the dish with a coating of cheese helps the soufflé rise high and get puffy. Inevitably it will fall, but a soufflé right out of the oven is a sight to see.

Beauty and the Beast: Cheese Soufflé
Ingredients:
Prep ingredients:
2 Tablespoons unsalted butter, melted
4 Tablespoons Parmesan Cheese
Souffle ingredients:
2 Tablespoons unsalted butter
1 Tablespoon all-purpose flour
1/2 cup whole milk
1/3 cup Gruyere, grated
pinch of nutmeg
2 egg yolks
3 egg whites
¼ teaspoon salt
Instructions:
Preheat the oven to 375 degrees. Prep two 10 ounce ramekins by greasing them with melted butter, then coat Parmesan cheese. Set aside.
In a saucepan, over medium-high heat, melt the two Tablespoons butter, stir in the flour to make a roux and cook for about 1 minute. Whisk in the milk when the mixture comes to a boil, remove from heat.
Add in the Gryuere and stir until melted. Add in the nutmeg.
One at a time whisk in the egg yolks until combined.
In the bowl of an electric mixer beat the egg whites until peaks form.
Add a large spoonful of the egg whites into the cheese mixture and fold in. Then fold in the rest of the egg whites and the salt.
Once combined, spoon the souffle mixture into the prepped ramekins. Place the ramekins onto a baking sheet and bake for 20 minutes until puffed and browned.
