Blood Orange frosting
I’m obsessed with oranges. I’m obsessed with all citrus really, but something about blood oranges are so intriguing. I think it’s their inconspicuous exterior, that once you cut open reveals a stunning almost shocking inside.
That surprise color is what makes its use as an ingredient so exciting. Sadly as with all things, the beauty does fade when you whip in luscious mascarpone cheese and whipping cream. But in the end, you’ll see it will have sacrificed its color for the greater good.
This citrusy frosting is so light and airy, it’s like eating an orange cloud. Sure it’s the perfect accompaniment to Blood Orange cupcakes, but I wouldn’t fault you for spooning it into a glass and eating it straight up. Something I do regularly…
Blood Orange frosting
Ingredients:
8 ounces mascarpone cheese
1 cup powdered sugar
2 Tablespoons blood orange juice
Zest of one blood orange
pinch of kosher salt
1-1/2 cups heavy whipping cream
Instructions:
Step 1: In a medium bowl stir together the mascarpone cheese, powdered sugar, blood orange juice, zest, and salt. Stir together until smooth, and set aside.
Step 2: In the bowl of an electric mixer beat whipping cream until stiff peaks form, being careful not to overwhip.
Step 3: Gently fold the whipped cream, into the mascarpone mixture until combined. Keep refrigerated until ready to use.
