Breakfast Pie
Pie for breakfast? Sure. Especially when the ‘crust’ is a savory combination of potatoes and cheese! Topped with eggs and baked it’s an all in one breakfast dish. Great for everyday or a special brunch!
ingredients:
3 cups shredded frozen potatoes
2 cups shredded cheddar cheese
salt and pepper
8 eggs
1/4 cup milk
salt and pepper
Preheat the oven to 350 degrees. Grease an 8×8 pan with butter and set aside.
In a bowl stir together the shredded potatoes, shredded cheese and season with salt and pepper.
Press into the prepped 8×8 pan until flat.
In a small bowl whisk the eggs, milk and season with salt and pepper. Pour the egg mixture onto the pressed potatoes.
Bake for 30-35 minutes until the eggs are set. Let cool slightly and cut into squares to serve.

Wow this looks good… just a few questions – if I can’t buy frozen shredded potatoes and I have to shred them myself, should I freeze them first before making this? And what kind of potatoes are best? Thanks!
